BIODEGRADABLE RECIPE: Fire and Ice Watermelon Salsa

Juicy watermelon replaces tomatoes in this salsa that’s simultaneously cool and spicy hot, perfect for a braai. The unusual combination of sweet watermelon, hot jalapenos, and lime is delicious served with tortilla chips, or a perfect accompaniment to grilled chicken, fish, or seafood ( for those carnivores out there.)

Ingredients:

3 cups chopped watermelon
1/2 cup chopped green pepper/ capsicum
3-5 cloves garlic, finely minced
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
2 tablespoon chopped spring onion
2 tablespoons chopped jalapeño pepper (optional)
1/2 teaspoon sea salt

Directions:

1. Place the chopped watermelon in a colander over a bowl for a half hour or so to let it drain a little bit, otherwise your salsa can be a little too juicy.

2. Combine all ingredients in the hollowed watermelon shell and chill for at least an hour. The longer you let it sit in the fridge the more the delicious flavours infuse.

3. Serve with tortilla chips.
